In order to learn something useful with a pyrometer you need to be fairly committed and have an assistant to help. You really need to get the temps as soon as the cars stops. Then you need to run around the car, take 3 measurements per tyre. Outer/middle/inner and log them down. (also take pressures).
Then you can work out a few clever things
1) are you working the tyres enough (manufactores will tell you operating temps) or too much, i.e. overheating them
2) are your tyre pressures right (hotter in centre, pressures too high and vice versa)
3) is your car setup right, are temps level between inner and outer? I.e. is the camber right?
4) are you getting enough grip front and back i.e. are the fronts at same as rears? Fronts higher would indicate understeer and vice versa.
All very useful, but you need to be a good driver once you are at that level. And the bits above are kind of the starting point.
Oh also, a warm down lap isnt really going to be part of this routine. Bang round the lap - pit in - crew take measurements. slight pressure adjustments (whilst you are sat in the car) Bang out again!
Oh and infrared ones are not as accurate, as they only measure surface temp.
