Removed the rocker covers today to fit new gaskets and pulled out the old oil tubes, the baffles that are above these attached to the main cylinders are heavily corroded, what are these for and are they easy to replace at this point (can't figure out how they are fixed).

I think you are talking about the heat deflectors Nick that are fitted to prevent heat building up between cylinders and to make most use of the cool air that the fan blows over them. You will struggle to remove those without the engine on a stand and stripped further, leave them alone INMO. You can see them in the attached pic is that what you mean?

Yes thats them Pete, if thats the case I will leave them where they are and just clean them up a bit, its not as if you see them when every thing is back together.

Did you manage to remove the oil tubes by taking the rocker covers off? I thought this was a cylinder head off job. If it is how good are the expandable tubes that Bones shows in his picture?

I removed the rocker covers as the gaskets needed replacing anyway however it doesnt effect how the oil tubes are fitted, I just crimped the old tubes flat with a large set of pliers and then bent them in the middle, they came out easily, only a five minute job.
I've yet to fit the new collapsible oil tubes but having looked at them it seems quite straight forward, if you look on pelicanparts.com there is a good technical section on fitting them, Bones (Pete) has also posted a good thread on the fitting of these.
 
Bearing in mind my car is five years your cars senior Nick I was amazed how thin, fragile and corroded these vital items had become. I would suggest anyone with an old 911 spends a little money on replacing these vital components. Collapsible tubes are about £20.00 plus labour or fit them yourself, best to remove the HEs though.
 
Pete, when I fit these is there a right way to fit them, I was looking at them and presume the larger of the two halves should go in the centre and the smaller into the rocker housing (difficult to see from your photos) at a guess to how the oil flows, would that be right?
Also I put one together yesterday, fitted the seals etc just see how they fitted, it was impossible to slide the larger half over the other with the seals in place, although I havn't yet oiled them but it did seem like an incrediblly tight fit!!
 
There is a trick to fitting these Nick. You are correct about the fitting direction, the 'female' tube goes in the crank case. Use silicone lube on the seals and they will allow the tubes to slide a little once lubricated but not a lot it is a tight fit. The method I used involved tightening jubilee clips around the tubes and carefully forcing the tube halves away from each other into their respective orifices with a screw driver, then loosening the clips, replacing and prising as many times as necessary. Do not overtighten the clips as the tubes will compress and deform. I had spare jubilee clips to hand as they seem very fragile at the threads which are exposed when fully unfastened.
