Clutch pedal travel too far

Hi all, trying to get my car up to scratch and done a shit load of maintenance to it since getting her last August. Belts, water pump, oil leak from cooler, new PS pump and recon rack and some welding was needed as well.
Some other bits going on now but when driving I’m sitting a little too close to the steering wheel and I'm not sure if there is something that can be done.
I'm fine with the hight but have come to the conclusion that if my clutch did not travel so far that I could sit slightly further back, just 2” maybe.
Now I did see that you can get a pedal stop that should bring the travel short of where it would need to be but not sure if that is a good idea because if you get that wrong and it does not open the clutch enough you might damage the clutch plate.
Another idea I had that would be to have an extra thick pedal pad so the extra rubber would act as a spacer so I can move the seat back by the same amount that the pad would be thick. But I cant find one (They do one for the mustang but is only in US and its quite expensive for a bit of plastic)
Has anyone experienced this or know another work around.

Just a thought...don't suppose your car is fitted with an aftermarket/dished steering wheel.
Standard wheel is pretty much flat.
 
No it has the standard h wheel but was thinking if an after market wheel with a short boss would help but on the other hand you do think i have the same wheel as a 959 why would i want to give that up ???
 
The clutch rod is adjustable, should be 109mm from face to clevis pin, another couple of turns will bring the pedal a little closer, might just be enough

i had to replace my master yesterday and I have made mine a bit to long, I’m to old for this upside down stuff
 
This us good news, my clutch pedal does drop a bit as well so might need some adjustment or fluid soon so hopefully when it goes in they can take a look for me, if I brought the pedal forwards would it still travel the same or stop early
