Sorry for posting such a noob problem but Im having problems adjusting my handbrake and im new to the DIY stuff. I read the guide on Clarks site and also a few posts on here but Im still stuck!

I jacked up the drivers side, removed the rear wheel and found the hole in the hub (about the size of a 5pence) I rotated the hub to try and find the location of the adjutment screw beneath but there doesnt seem to be anything in there [&:]

What am I doing wrong?

Good timing! I'm in the middle of doing the same, I would advise you take the disk off and check the springs/pads. Its only 2 screws on the disk and 2 19mm bolts holding the caliper on (10 mins more work).
If not the adjuster is at the top and is a barrel type adjuster with fins to alllow you to push it up or down through the hole to wind the pads in or out.

Both. As said, take off the disc so you can see what's what, strip and clean while you're in there. Roughing up the surface of the shoes won't do any harm while it's all apart [;)]

Change the springs if you touch them in any way. My old car was used in a technical demo at the first Brands festival, and the whole lot fell apart later that day. Cost to fix it was four new shoes, all the various springs etc. and a few hours labour to pick out all the broken bits. []

This is one bit of the car that tends to be fine until it needs fixing. The little springs that hold the shoes in cost a few £s, so why re-use them?
