I am not sure I agree on "no one covers the 'Ring" and would be interested to understand the logic for that broad statement.
The Nurburgring is a toll road and as such subject to the normal German road traffic requirements, one of which being insurance. Unless your insurance contract specifically excludes the place or category of road then you are covered so long as you are also keeping within the remaining bounds of your insurance. If you are timing your lap for instance there is an argument that the insurance company be be able to avoid your policy.
Whenever I insure a toy car i specifically ask if the 'Ring is excluded. AON were clear that the 'Ring was excluded. RH do not exclude it and nor do Firebond whom my 993 C2 is with. If it helps Norwich Union direct who cover my Jaguar XJR also do not exclude cover at the 'Ring.
The test I used in my mind to verify the logic of the position in addition to having reviewed the policy documentation is that it is like driving on an autobahn at 180 mph and then having the claim avoided; what would be the basis? The same is true of course in the UK that driving at 180mph on the Uk motorway and having an off may get you a ban but not allow (in the absence of other circumstances) allow the insurer to avoid your policy.
