she's an absolute beauty, but noticed recently on the drivers side the distance between the tyre and the wheel arch is 10-15mm larger (front and rear) than the passenger side. Why's that ? how can it be rectified ?

Why? First possibility is that the body work is even due to poor repair or damage. Second and more likely is just the ride heights are different. Simple as that. The drivers weight might almost even t out even if you are a normal size bloke - so the tongue in cheek comment is not so silly after all.

How to fix it? Adjust the ride heights.

Unfortunately, there is no magic answer or secret to this one. Each corner of a 911 is adjustable in height and whenever something requiring suspension removal is done, the ride height has to be reset. Your corner weight may actually be perfect even though the heights are off.

It wasn't meant cheekily - I was being serious. Even a fairly average man of, say 10 stone, adds a not- inconsiderable 140lbs to the weight of the car and is obviously applied only to the driver's side. If the car is set up for driver only it would be perfectly reasonable for the ride height to be set such that it compensated for that extra weight in the driver's seat. Indeed, most suspension gurus would put a weight of that order in the driver's seat before adjusting the suspension.
