S2 temperature gauge is not working

Sounds like you are having a rough time with the cabrio these days - accelerator cable problems and now this.
It'll be one of three things. Either the gauge is duff, the cabling is duff or the sensor is duff. And that's all the help I can add! I don't know how to test any of them without taking it apart ...
I do know that one temperature sensor is mounted in the lower part of the engine block and can be accessed from underneath the car. It is a small cylindrical thing with two wires attached, screwed into the engine (3cm diameter, perhaps, and maybe 3cm long as well.) One wire is the oil pressure sender, the other is (I think) a temperature sender. You could try seeing whether these wires are still attached ...
I'm sure someone more knowledgable will be along soon to offer some more help!

I wonder what should be the correct position of the needle when its cold so that I can attemp to secure it back. Please advice.

It sounds like the needle is moving the right amount it just starts from the wrong place. (Any particular reason you put it back on at 6:00? []) Take it off and put it back so it lines up with the lower most calibration on the dial and see what happens then.
