George, it's been a while since I did mine so the exact process isn't fresh in my mind. There's quite a bit of info around on installing, as examples see

here. Theres a pretty comprehensive install guide that comes with the B&M kit which steps through the entire process - don't know if anyone still has a copy? As to your questions:
Do any of the linkages need to be "locked" into place whilst changing the lever? - You don't have to - the linkage assemblies can be disconnected completely in-situ - theres some discussion and pictures in the links above. Saves hassle if you do it this way.
Does a bench strip down need to be done, or can all the work be done in the car?
I did mine in the car simply because I haven't got spare bench space - it would be easier if you can do it off the car, but as I said, it's do-able in-situ.
Are there any torque settings needed and if so what are they? - No. The unit has adjustment via a set screw - adjust until there's just enough play for the lever to self center, and thats it. Its adjustable too, so you can re-tweak it later if the shift loosens.
Tips - when removing the existing plastic bushing from the stock shifter, the B&M instructions say cut them off with a utility knife - use a hammer and chisel instead. CAREFULLY. Otherwise you'll spend ages trying to cut through the plastic. You'll be replacing the entire assembly so none of the plastic bits get re-used.
If you have leather handbrake - protect it. It's a bit of a fiddle removing the centre console and it's quite easy to scrape the sides against your seats/handbrake. Better safe than sorry.
It all sounds complicated, but if I can do it - anyone can. Just take your time. I love the feel and weight it gives to the shift.
