Throttle dampening?

A bit of advise please:
When running from cold and I take my foot off the gas the throttle closes very quickly as though there is no dampening giving a very jerky ride. It idles at the correct speed, its just difficulty to drive smoothly at low speed during gear changes. When its up to temp its fine. Is the Idle stability valve responsible for this?
Its a 1989 2.7.

You can adjust the throttle stop to allow a bit more air past the throttle, I did this on my old lux as its a fix for the idle shudder issue as it bypasses the closed throttle fuel cut off. I also found as a benefit it made the car a little smoother.
 
Its an issue with some 944's, maybe only lux's. Basically they shut off fuel on closed throttle above about 2k as an economy feature. This can cause the idle to dip below the normal idle speed in some circumstances and it makes the engine shudder.
 
On a turbo the first place I'd look would be the TPS - don't know if it's the same setup on an NA. If the TPS is switching off a bit early it'll feel exactly as you have described it. Try Clarks garage for all the details
 
I wonder if you have the throttle response kit fitted - therefore the throttle is a lot more responsive to pedal movement etc
