No ideas whatsoever save a set of konis?
AMG probably did something but will end up looking a bit pimp daddy?
Obviously what a great place to start for a stealh project with a 6.0 V12 bi turbo chucked in, suspension kit and an lsd and what a great comedy 'Ring car?

What do you like/dislike about the current rubber?

I'd suggest something more along the lines of the Falken FK452, or Dunlop SP9000, or Goodyear Eagle GSD3.
Personally i'd go for something like the Continental PremiumContact for a large, heavy car like that with decent performance and used in all weathers.

Of the ones shown on that Camskill link i'd go for the Goodyear Optigrips without a doubt.

Pirelli P6000
Seem fine on Mrs Melv's SLK, even in the snow.....
Have you considered:
Yokohama AVS SportTransformed my old Audi A4 Avant and quiet as well.....

You clearly weren't trying hard enough
I was on the limit, feathering the throttle beautifully ;-0.....until 55mph and then I floored it...amazed as it didn't even kick down, just got to the point on the torque curve where the skinny old tyres can't cope. All good fun!
Last year I had a set on a 160bhp mk1 Golf Gti, in the wet the car would actually change lanes with frantic wheelspin if you floored it in 4th..they have the nickname "ditch finders" for good reason.
I agree on something like a decent Conti sport,,if you go for some of the softer more sportier tyres, I would expect the wear rate to suffer badly due to the weight of the car and obvious loss in ride quality.
The standard 888 or MSC discussion really does not apply in this instance!

moderate wet grip on jag xjr6 I used to have but beautifully progressive quiet and comfy in my view way superior than pzeros on before which made car tramline and ride badly
used nankangs at oulton on tuesday on m535i winter trackday car and it had no trouble in wet
currently used vredestein ultrac sessantas on xjr8 which are also good value and excellent

LOL...MSPC on 500SE in wet would be, er, interesting...
The 500SE takes 205 65 15, would it help to go to 210 or 215 or would it upset ride/handling with no appreciable benefit?
