Best wheel sizes for track days

It totally depends on what one wants their car for in my opinion.

Yup, mine has a bone-jarring ride on 16" wheels already, I can't even imagine how worse it would be with lower profile tyres [&:]
 
There is a school of thought that says these cars run better on 16" rims, especially at the rear. I noticed a difference when switching from the original 16" teledials to 17" rims. I noticed that when accelerating out of bends the rear on 17" rims never felt like they 'dug in' and I was always a bit more tentative accelerating out of tight bends, especially in the wet, whereas on the 16" rims, which were 145's as opposed to 155's, always felt like the more you gave it the more grip they had and the rear end was rock solid. I was never sure if this was due to the brand of tyre, tyre pressures (though I did mess around with tyre pressures and it made little difference) or the fact there was more compliance in the tyre wall and the extra compliance was putting more rubber down onto the road.

The rather rudimentary semi-trailing arm suspension on 944's doesn't maintain geometry very well compared with double wishbones or some fancy multi-link setup, so a bit of side wall compliance can only help.

It might be worth someone experimenting with 16" rims on the rear and 17" rims up front? the Macphearson struts up front are much better coping with larger rims.
