Do I have 7s and 9s (or 6s and 7s)?

Devalue your car? Not sure. I think you potentially narrow the market for the car but maybe not too much devaluation. Then again, you never recoup what you spend on mods.

Personally, I do what I want for me. I didn't buy my car for the next owner. I would draw the line at a slope nose conversion or Gemballa Avalanche kit [:'(] (no matter what the aero benefit or weight reduction [:D]), but if you choose your mods well you get a lot of personal satisfaction and a car that is generally much admired (except for the wax and white gloves concours crowd). Backdating to RS look or IROC or CTR bumpers are fairly well accepted IMHO (and all reversible).

Maybe a thread discussing what mods will not decrease the value of your car is appropriate?

I'm obviously still getting used to my CS, but I don't find the front light with the 6J wheels. Do the 7's carry wider tyres - presumably so? What pressures do you run the 7's at?

Not necessarily. You can run the usual 205s or run 225s. There isn't much difference as the 205s are stretched out and 7 inch rim is a little too narrow for the 225s to really work to their optimum. Those running 245s in the rear seem to prefer a 225 up front as it seems a better balance.

I also do not find the steering very light.

I run 7"/205 and 8"/245 on my 3.2 - never thought of 225 on the front, bearing in mind they may scrape the wheel arch - and the car tends to slide in a straight line, so the grip is about right.

Not sure about advantage of 9" on the rear, if they only take 245 tyres (is this correct ?)
 
Advantage of the 9 is that it stretches out a 245 changing the shape of the contact patch to the better. You could easily run a 265 on a 9 but no such tyre exists with a compatible profile - like 265/40x16. With like tyres, I agree there is little benefit of a 9 over an 8.

A 225 up front can be a tight fit. Rolled lips and 1.2 degrees negative camber and slightly below euro ride height and it rubbed slightly for me. Change to 1.5 degrees negative and no problem. YMMV, as our cars all seem to be unique in this respect. I would strongly recommend a 225/45 rather than a 225/50 if clearance is a problem or perceived to be a problem.
