According to the wiring diagram for the '81 SC the ignition switch feeds the CDI (Red wire) and the fuel pump relay (Red wire from Fuse 16) separately, so I don't think you should lose sparks with the relay out. However, if you are picking up power for the CDI from the Red/White wiring that is connected to the Warm-up regulator, the Supplementary Air Valve or the Temperature Valve, then there will be no power with the fuel pump relay taken out.
