Tell you what, get Glyn to give it the Zymol treatment (see Yorks forum), get it shining like a mirror, THEN decide if you still want to change the colour. Just a thought ... either way, I'd consider living with it for the summer and do the work through the winter or you'll lose time on the road with it.
Look forward to seeing it in the flesh sometime.

Nice interior - better than black.
That looks like great, nice colour not too 80's and great interior colour as well.
The seats look like standard Sports Seats as they're heavily bolstered like mine.
As suggested above, give it a Zymol.
I'd also suggest paying attention to the small details a set of crested wheel centres make the car look special IMO.
Repainting it would be a crime, I'd suggest selling if you can't live with the colour and finding a suitable black car or another 3.2 which is in need of a respray.
Colours grow on you I have a Porsche Rubystone Red Caterham (same colour as the 964 RS) looks Pink, was going to get it resprayed but it's individual.

And yes, the coloured creasts would set the wheels and car off nicely.

You have the Sports option seats. Turbos have the same seats as 3.2s of the same vintage - most got the 8 way power seats, but sports seats with the big bolsters were an option. If you don't like the interior, think of an easy fix - bolt in black Recaro Pole Positions, a black Momo 07 wheel and add black L/W carpets and maybe black RS door panels. A 40kg weight reduction and you get most of the black you like with some lightening touchs of grey. Keep the old bits for when you sell it.

I added 25mm spacers to my rear wheels Dave, fill the wheel arches very nicely, about £25 from any inde' or in fact any garage that knows what they are doing.

Well I think it's your motor so paint it black if you want to and stuff any re-sale issues- it is not as if its a heritage model.
Suggest you leave re-sprayiong for a year or so to get to know the car better and allow any paint or bodywork niggles to emerge 'cos re-spraying is such a good opportunity to deal with any (hopefully tiny) issues early eg seams on the rear pillars, front wings etc.

Wheel spaces should definitely be kept small in the interests handling but are worth it for the look. Agree with Richard who knows more about it in any case.
