I think the last analogue 911 suitable for the track was the 996GT3. 381bhp and only ABS to help out in times of trouble.
After that the Porsche acronyms really took hold and who knows what electrickery is going on between your driving inputs and the contact patches.
Someone may come along and correct me but I think your 991 is likely to have PTV, PASM, PSM(itself a cornucopia of other stuff), Electronic throttle, electromechanical steering assist and rear wheel steer.
Just take the last of those. Your rear wheel geometry is being constantly adjusted by stepper motors programmed the way Porsche think is good for you. You have no opportunity to input and not much idea of how the thing has been calibrated. Does it "learn" from your driving style? Who knows.
Does it matter? Not to me. On the track I couldn't handle 381bhp and found the 260bhp of the 964RS much more to my taste. 560bhp and no help? No thanks.
But this is what it looks like!
